How to make a delicious Chai Latte

Lately with the weather turning cold I have been experimenting with Chai Latte as a delicious alternative to coffee; it is packed to the gills with delicious winter spices to warm the cockles of your heart.

Nothing says Christmas quite like the smell of cinnamon and cloves wafting through the house; I have tried a few recipes and so far this is my favourite and my kids agree!


Ingredients:

2 Cinnamon Sticks (or 2 teaspoons of cinnamon)

8 Cardamom pods

4 Cloves

6 Peppecorns

1 Star Anise

2cm Ginger sliced (i left this out as my hubby is allergic)

3 Black Teabags

500ml Milk

1-2tsp Brown Sugar


Method

Toast the spices in a dry frying pan to release the aroma, when they are fragrant put them into a tea pot, or caffitiere (I don’t own a tea pot so I used a thermos flask) with the Tea Bags and Ginger with 500ml freshly boiled water and leave to infuse for 10 mins

Heat the milk with brown sugar, stirring until the sugar is dissolved, once lightly steaming froth the top with a milk frother or whisk to create foam.

Strain the tea between 4 mugs, or heatproof glasses, then pour in the milk keeping the froth back. Stir to combine. Top each latte with the froth of milk and sprinkle with cinnamon.

*I strained mine through a muslin cloth to achieve a really smooth finish
